Tried-and-tested brownie recipe for brownie in a loaf tin which remains a bit gooey in at the centre


  • 100g dark chocolate
  • 225g butter
  • 275g flour
  • 3 eggs
  • 300g sugar


  1. In a saucepan, gently heat chocolate and butter, being careful not to burn the chocolate
    • Use the lowest possible heat setting if you are not sure
    • Stir until both molten and mixed
  2. Whisk/blend eggs
    • I just use the blender but a whisk and bowl is fine too
  3. Pour whisked/blended eggs into a bowl/saucepan
    • Bowl/saucepan needs to be large enough to hold all ingredients
  4. Add sugar to eggs stir until mixed
  5. Add butter and chocolate mixture, stir until mixed
  6. Add flour, stir until mixed
  7. Pour into greased loaf-tin
  8. Bake in oven for 40 mins at 160 degrees centigrade
    • The middle will not be firm and so the loaf-tin needs to be left to cool
    • It should then be refrigerated before being cut into slices
